Alpine cheeses

Produced in the Cadore mountain pastures during the summer, the cheeses reflect the high-altitude pastures and the expertise of local cheesemakers.

  • Cherz (fresh cow's milk cheese) 
  • Formai imbriago (cheese aged in wine)
  • Smoked ricotta (used grated in many dishes)
  • Schiz: fresh cheese, pan-fried with melted butter, sometimes served with polenta.
