Strudel

• 250g 00 flour
• 1 egg
• 1 tablespoon extra virgin olive oil
• 1 pinch of salt
• Warm water to taste 

Ingredients for the filling:

• 1 kg apples (Golden or Rennet apples are best)
• 100g sugar 50g raisins
• 30g pine nuts
• 1 teaspoon ground cinnamon
• Juice of half a lemon
• 50g breadcrumbs
• Melted butter to taste

Method:

1. Make the dough: Mix the flour, egg, oil, salt, and warm water until you obtain a smooth, elastic dough. Cover and let rest for at least 30 minutes.
2. Make the filling: Peel the apples, cut them into thin slices, and place them in a bowl with the sugar, raisins (previously soaked), pine nuts, cinnamon, and lemon juice. Mix well.
3. Roll out the dough very thinly on a floured cloth until it is almost transparent. Sprinkle the breadcrumbs over the pastry, brushing first with a little melted butter (this helps absorb the moisture from the apples).
4. Place the filling on the pastry, leaving a free edge, then roll it up gently using the cloth.
5. Place the strudel on a greased baking tray, brush the surface with more melted butter and bake in a preheated oven at 180°C for about 40-45 minutes, until golden brown.
